Black rice is higher in fiber and protein than brown rice. It provides about five grams of protein and three grams of fiber per cup dry serving. Black rice can be best enjoyed as porridge, rice salad, or fried rice.

Red rice is a honey-colored grain, with a slightly salty and nutty taste. Some existing research has examined the positive inhibitory effects of red rice on leukemia, cervical and colon cancer cells due to its proanthocyanidin content.

According to a 2016 study in the Journal of Agricultural and Food Chemistry, red rice has antidiabetic effects. The study found a 2.3 to 2.7-fold increase in basal glucose (important for proper regulation of blood sugar) with exposure to red rice bran extract. Analysis of different types of rice also shows that red rice contains tocotrienols, a form of vitamin E, which has been associated with neuroprotection, anti-cancer activity and cholesterol-lowering properties.
